As for the materials,I'm having trouble locating pad-eyes for the deck lines
: and what not. What do you guys recomend for a snag free type and where can
: you get them? Would it be better to go with recessed ones? So many

First, enjoy the stripping process, I second the sentiment of the other posts. You will probably find yourself up at 2 am reinventing the wheel and coming up with great new ways to construct a kayak.
As the proccess of building goes along you will find a personality materializing . This personality should dictate the finished form. I thought that I would go with Erik Schade's recessed fitting ( they are wicked nice) but my boat just seamed to need raised tie downs. So I guess my advise is find the soul within you boat and let her decide her ultimate apearence.
