Build the boat you will paddle first. That will give you the confidence that you can build a boat that is fun enough and safe enough that you want to put you your family in one like it. Unless you already have a glass or plastic boat, who will will monitor/teach the paddler in the small boat you propose to build? Alternative 2: build the triple first to test how much your spouse and child really care about spending their time paddling.
This all assumes that your interest is in the paddling and not the building.
