I was avoiding using epoxy because it cures so much harder than wood. I expected (and was advised) that this would create difficulties during sanding, with the cedar being removed much faster than the filler.
When you use Durham's with epoxy, I suspect that it is behaving like any inert filler (such as microballoons), and just thicking the epoxy. Durham's is gypsum-based and needs water to "set up".
