Sounds like you're considering varnishing the inside prior to joining the hull and deck? I suppose you could do that, but you'll end-up having to sand some off to do the inside seam and add bulkheads (assuming you use the wooden kind). To me, this sounds like too much work, and I'd suggest varnishing after the halves are joined. In which case, there's not a big rush to varnish the interior. You could do it at your leisure after you've paddled a bit.
As an aside, I've never varnished the inside of any of my kayaks. They just don't get much sun in there. There's either a paddler in the way or there's a cockpit cover in place. However, I am reconsidering this decision in light of the reports by Nick and Jay about pinholes in epoxy-only coating leading to water damage. I haven't seen this yet, but I don't want to either.
