Mill Creek 13 and Little Auk too

I'm currently building CLC's Mill Creek 13. As Jim says above, it's exactly the boat you are describing. Stitch and glue plywood. If you haven't checked out Jim's link, I can tell you that the beam is 29.5 inches and the length is 13 feet. It has a large open cockpit.
Another boat to consider is Nick's strip built Little Auk. It will take longer to build, but it looks nice. http://www.guillemot-kayaks.com/Building/Guillemot/LittlAuk/index.html
