Hi Brion, I installed my tee nuts behind Okoume like you described. I secured the Okoume with thickened epoxy only (no glass) and they are very solid. Tape over the back of the nuts to keep them from filling with epoxy. Be prepared to tap out the threads; some epoxy will inevitably seep into them.

Note: clamping Okoume blocks in place is a hassle; I think I turned the hull on its side and used weights.
