Should work fine as you describe. Be sure to get the edges coated well.

David Hazen's book shows a really nice way of making bulkheads from panels of edge glued strips. These are covered with glass cloth for additional strength. It is a nice way to use up left over scraps of strips, and it matches the colors of the wood in your boat.

Some people like to mount their bulkheads a bit loose, that is, they leave some space between the bulkhead and the hull. to do this the mount the bulkheads with 2 inch to 4 inch wide glass cloth or tape, but no fillet. The seam can move a bit, so the hull can shift shape a bit with heat or cold, or flexing. The worry is that the point where the bulkhead touches might become a focus for mechanical stresses, and potentially the point where the hull might fail.

If the bulkhead is covered with glass then there is no need for additional tape a strip of glass cloth for mounting. Just leave some overhanging the bulkhead by a couple of inches and everything can be done at one time.
