Consider polyester (Dyson) rather than Nylon. I built a Greenland skin two years ago and researched skins quite a bit. Nylon will loosten up when it gets cold and wet. Poly won't. Poly has a 14% shrink rate with excessive heat (tourch or industrial heat gun) which helps when skinning. Nylon has a much lower shrinking tolerance and expanding temperature tolerance which means it get affected by cold water and hot days.
Bill Lowe in MA, willow Kayaks - builds two a month and swears by Poly - (13 oz) He was very helpfull in guiding me. By the way, I used a colored epoxy to coat it. So far it's great. Has flexability and is tough.
Rot, mildew? ha ha ha ha ha.
Not trying to burst any bubbles, but I heard from many people who had to re-skin boats using canvas because of rot. Skinning is a lot of work and canvas is actually harder to get tight, heavy and you have to pile on a lot of weight in paint etc.and it can rot and it's not as tough as the synthetics. It is cheaper however.
