I am not sure what you mean by the "two fill
: coats on each seam". However, I did do the roll the tape thing along the inside of the seam of my Nick Schade Guillemot S&G. Apart from the drama of the starboard bow section (which I did first) where I had rolled the tape too tightly and being an excitable person, rolled it out too fast. I gave up on the third attempt, satisfied with one barrel roll from the tape and the over long, too tightly bound roll jamming 2" from the end.
Anyway, I digress. I completed the remaining roll outs with out any problem -roll loose and roll slow. Like you, I wanted to make time, so I waited 3 hours and turned the hull on to the other edge and did the portside.
It worked, but I got a spikey, punk epoxy hairdo from rubbing against the still green epoxy from the starboard 'roof'. I left the kayak on the port edge (starboard up) then spent the night worrying that my tape might peel itself off (it didn't).
On reflection any time I made up by doing both sides at once was lost because I had to work this weekend. Given all the time and effort you have put in to get this far, I reckon do one side at a time and do it right. All too soon the building will be over. By doing one side at a time it should contain any of those pesky runs to a place where they can be usefull - in the chine.
