As long as you have full access to the seams on both sides, you can do fill coats to both at the same time. However, since they'll both likely be vertical, you could get some runs. The best way to avoid this is to use thin coats, and a roller is perfect for building thin coats. Because they're thin, you may need more than 2 coats to fill the weave. Also, after you feather the edges of the seam tape, you'll want to apply another coat or two to bury the exposed weave.
