Daren,
It really depends on the boat. The boat i'm working on is an Olympic sprint boat, strictly built for all-out flatwater speed. It has a lot of rocker to it, which seems a bit odd to me, but that's the way they design them! So, you may want to go with what the design purpose of the boat is (whitewater, sea kayak, etc.) The hull shape plays in here a lot too (mine is a really really deep "vee" shape).
