You might want to let the resin harden longer. Epoxy sets up in hours, but it continues to polymerize for some time. It takes weeks to build up its final strength. Some people use a heat treating method to cure the epoxy. I'm guessing different resins are heat treated differently, if at all. The manufacturer of your resin is the best source here. For such small parts heat treating ( or accelerated curing) is not too difficult. A 150 watt bulb (or bigger) in a reflector, set close to the part, should provide enough heat. An oven or meat thermometer next to the part would give a pretty good indication of the temperature. Give it a while to come up to a temperature, and then move the bulb back and forth to adjust things.

A screw from the top of the hatch into the padeye would hold things nicely, too. You can conceal the screwheads with small pieces of veneer.

A padeye with a wide base has more contact area. Remember that the strength of the bond is expressed in pounds per square inch. If you can glue 2 square inches of wood for each padeye you'll have a much stronger bond than if your joint is only 0.5 square inches, or less. Consider screwing your padeyes to a 3x3 inch piece of 3/8 or 1/2 inch plywood, and then gluing that plywood to the underside of the hatch. You'll have a bond of 9 square inches, which is probably stronger than the screws holding the padeye to the plywood!
