I would not give them a season in saltwater before they get seriously corroded and another season before they die completely. They will almost certainly have visable rust on them after your first day out in saltwater. I've had "stainless" steel rust in one day.

Saltwater is very powerful stuff, if there are two different metals anywhere on them you will get a galvanic reaction that will rapidly eat into them. The spring will probably go first. Unless you can find silicone bronze and/or stainless steel, I would not bother with them. Corrosion will be made worse by the fact that they are inside an enclosed space that will never dry completely. The nickel plating on stuff is cosmetic, it will not stand up to an attack from saltwater.

Don't count on a perfect seal keeping the saltwater away, all it takes is a splash or two. If you are paddling exclusively in freshwater your chances are better, but I would still spray the hinges with WD-40 religiously. Unfortunately, the WD-40 might eat up your gasket...
