A couple of thoughts that might help:

Use a soft glue like contact cement to assemble the sheets of foam. A hard glue like epoxy will make fairing difficult.

You might consider a "break out" section of foam pieces where you plan to dig out after the intitial hull glassing, such as the cockpit area. These pieces can be assembled using toothpicks like nails. Though you will have to dig out where the glass is attached to the foam but it would be a lot neater in the middle of the foam blocks.

To me, this method cries out for a more rounded type construction than S&G. Fairing into flat planes can be a pain, but certainly not insurmountable.
