In general, I see no problem using pine alone except that most species of pine are heavier than the more common woods used for strip building. To find the lightest pine species, check out the wood properties link below. Of course, where you live may dictate which species are available in your area.
You might find an overly white deck a bit tiring on the eyes after a long day of paddling in the sun. Otherwise, a light colored boat has can be very striking, heats up less, and is easier to see from a distance.
