best way to finish the ends of a strip kayak???

I am nearly finished installing the strips on my kayak and I am beginning to wonder how to clean up the bow & stern. The strips are all fitted fairly well except that I have some gaps where the right and left side meet. Options I have considered are laminating a veneer tape on and then shaping it but I can only find the pre glued stuff, will that work? Or should I use cedar strips? I don't really want to try to fit a solid piece of wood tothe shape if I can avoid it. Are there any strength issues that I should be aware of? Any help would be great.
