Jim,
I just glued and FG my S&G hull in my basement. It was very humid and 70-85 degrees in my basement. I did not have any problems. The humidity may have swelled the wood but I did not notice anything. Humidity does not effect the epoxy at all, but temperature does. When it was warm I could do two coats of epoxy a day because it cured so fast.
One word of warning:when you first coat the wood with epoxy do it when the temp is dropping instead of climbing. This will prevent out gassing.(See below link.)
