Any "spar" varnish will work well. I've had good success with Helmsmans but generally use Zspar Captains. I've tried a good quality "spar" urethane, but it just evaporated away after one year. Wood hardware coated with 3 or 4 coats were bare wood by the end of the season just due to time spent in the sun.

1 quart of varnish is enough to completely coat a kayak. Even the expensive stuff is cheap when compared to the amount of time and effort you have put into your boat already.
