I'd stay away from oil-based stains, which would affect the strength of the epoxy/wood bond. Water-based stains should be safe. When working with epoxy there is always the danger of stray epoxy inadvertantly sealing areas of the wood, which will make even stain absorpotion problematic.

you can also tint the varnish using Japan colors
