CLC uses a "Lapstitch" method on some of its boats. It's basically a hybrid of lapstrake and S&G. I know the sassafras canoes and some of the rowing boats use it. No reason it couldn't be used for a kayak. The method uses less epoxy and less fiberglass.
I don't know what the effect would be on the performance of a kayak.
