I'd second the table idea for externals. I picked up the idea from Ross's site and have found it very useful. I can't imagine where I would keep all the clamps, glue bottle, sanding stuff, knives, etc if I didn't have it. As for redesigning it when you flip the hull, consider 3-4 cradles cut to match the hull forms at specific locations. They can be bolted to the riser blocks you already have positioned. On X, I found the cradles I made from doubled up cardboard to be quite sturdy. They easily stood up to lots of leaning, sanding, etc and were much more stable than slings.
