The expensive alternative might be to use a more exotic marine grade plywood. I'm sure Mark can supply links to some pages, or you can try Aircraft Spruce in CA or GA. (see link below) They have several products that are different woods/colors in their warehouse, and I assume in the catalog too.

My preference would be to use a redwood or ebony stain before you start coating, or paint part/all of the hull. You want to stain before you epoxy so the color is consistent. Before I committed time, safety and money to staining, I'd take a piece of the ply and stain/epoxy coat it to use as a test panel. Try gluing two stained pieces together with epoxy too. If the epoxy soaks in well, and the pieces don't pull apart easily, you're in business.
