For me, the two turning methods are mutually exclusive. I'm either using the rudder to turn or I'm carving a turn by leaning the boat. I don't do them both together.
If you do decide to reverse your cables and learn that way, you'll have a heck of a time paddling any other boats in the future (unless, of course, you cross your legs).
