It's exactly like water on frosted glass; it becomes virtually clear. I got this wonderful analogy from Nick plans. I doubt that it could be explained any better! The same sort of thing is at work when you wash your car: it looks perfect/clean when wet, but as it dries, all of the scratch marks are made visible again. Only difference with epoxy/varnish is that the surface essentially stays permanently wet.
