Strip the deck and glass it. Now your hull and deck are glassed on the outside only. The humidity is not as much of a problem as the stress and strains of the epoxy shrinking and distorting the shape. If you abondon the project for a while, keep the hull on the forms and wrap a few straps around it holding it on securly.
I glass the outside of the deck only and just lay it aside while I finish the inside of the hull. The deck never seems to distort much since it's relatively flat compaired to the hull. I once built a Rob max Panache and had the deck close up about 6 inches because I left it off the forms for about two weeks right after it was glassed. It took all my strength to force the forms back into it. I could hear the glass making cracking noises!
Once you finally glass the inside of the hull and as soon as it hardens, place some forms in it and hold them in with some straps when your not working on it.
