I buy a very roll of heavy plumbers solder and then I bend it around the hull at pre-determined points along the keel, I can transfer the shape to paper and then make an offset table from it. You will need to know the beam at each point as you put it on paper.I wish I thought up this trick, but it has been used in England for years.
