Mark--I think you're on the right track. For a stitch and glue boat panel shape is very important. I've been toying with the idea of copying a fiberglass hard chine boat in stitch and glue wood. I think I'd start out just as you describe, laying patterns over the exising boat. I might use light cardboard so it wouldn't flop around as much.

In my case there is no guaranteed that the shape could be developed from flat panels, because the original was built in a mold. But in the case of an existing S&G boat you at least start out knowing that what you are attempting is possible.

Once I got the patterns made, I think I might want to measure them to create a table of offsets. One reason is that the offsets can be scaled. This allows you to make a model as a way to test your panel shapes. It also lets you make the new boat any size you like. And when you plot the panel shapes from offsets, you necessarily re-fair the curves, which may catch irregularities in the original pattern-making process.
