Please explain this. What does convexity and being airplane-wing-like have to do with not getting blown? Does your reasoning not apply to modern paddles, most of which are also convex?

There is more to efficiency than surface area.

Do you mean you don't have much of a wing, after all, that is all a rudder is?

Absolutely, any diffenence in efficiency is going to be fairly small especially in regular cruising.
