I know I'll catch flak for this (George...) but...
I have a Cosine Wherry that was built with hot melt between edge glued strips. I had to do a lot of sanding because of not using cove and bead, but it turned out good.
I'd use hot melt again, even easier with cove and bead. Just put a little daqb on, line the strip up carefully (it's not too hard to cut it apart though), and stick it on. With a dab avery 6-12" to hold the strips together, the remainder can be filled with a squeegee and dookie schmutz after the hull is finished. George's argument that there is no epoxy in the seams is not valid, as you come in after and squeeze glue in from both sides. It's fast and easy. It'd probably be even better with CPES sealer from the earlier threads. Scraping the drops off couldnt be any easier, no marks left.
