Make sure you consider both sides of the hull when deciding on a fillet size. I built a CLC Chesapeake this past winter. When I sanded the edges on the outside of the hull I wound up with about a 1/4 inch or more gap between the two pieces of plywood where the chines had the sharpest angle. I am quite happy to have a generous fillet and glass tape on the inside in those locations. Don't get hung up on the weight, your boat will still float. Add five pounds to the boat and take five pounds off the paddler and you'll both be better off! Good luck.
