Wet sanding before varnishing??

Getting close to finishing up a Pygmy S&G kayak and am wondering about the proper sequence of events to get the hull finished as nice as possible. The directions say to finish the boat, paddle for a month (to let the resin cure well) then finish up with a good spar varnish (they recommend VSpar Flagship with good UV protection). I would appreciate any suggestions on whether I should wet sand the resin a few times to get a good flat, clean surface to varnish, or is there a better way to get the hull nice. I've got too many hours into this kayak to blow it at the end!!
