the closer they are together the less forces there will be on the hulls. of course if they are touching you would have to paddle them like canoes.
I'd either build a double, or if your dog or kid is coming along alot, a triple.
If you want to sail it I'd just go ahead and build a small catamarran, the Wharram cats are cheap and seaworthy, a Tiki 21 (21ft) has just circumnavigated the globe.
