I think San Javier Kayaks makes a kit for people with big feet, but that is probably a large, high-volume boat.

What would you think about modifying a standard design, like say the CLC Chesapeake 17, by either adding height to the side panels or putting a custom deck on it. The deck could be modified by reducing the radius of the deck beams to give more height inside. Or you could build a stip-built deck to whatever contour suited you.
