So you've just build a wooden kayk and now you want to fill the cockpit with plastic? Why not make your own adjustable foot braces and make them to the angle you want and make them "one-hand-adjustment"?

Though these are for a rudder, just make them fixed if you don't use a rudder but use the position adjustment idea. The aft end is held with a large nylon bolt (toilet seat bolt) epoxied to the keel line and the fore end can be held by a wooden block with a slot in it.
