I would agree with Gerald to go 4oz glass all around. I'm doing that on a Waters Dancing Solace 16 LT and I'll be under 40 lbs when I'm done. Don't do any fill coats on the inside to save weight, although I would add a second layer on the inside of the hull between the bulkheads to reinforce the cockpit floor where you'll be standing from time to time. Taking care with the fill coats and all the other little things will add up to a light boat.
