Hi Holmes,
I think you'll be fine with a lighter weave on the outside. The 4 oz cloth on the deck and even using it to do your outer sheer. Opt howerer for the heavier layout on the hull, and use an epoxy thinner in your sealercoat. You are going to want to get your wood real hard, especially along the keel. So take extra care and get let the resin seep deep into the wood. Get the resin as liquide as possible and work into the wood. Then do a double layup of 4 oz cloth along the bottum of the hull. This should help with hard landings.
