Olive oil or any animal/vegetable oil will eventually go rancid. (I've never noticed this on my cutting board in the kitchen but that's what every source says).
Mineral oil is recommended for food safe cutting boards.
Shellac is safe-but check any can before you buy. It's also a really nice hard finish that you can repair or renew with denatured alcohol and more shellac. Shellac is also used to coat candy.

I'd vote for shellac myself. It looks great, its durable, its waterpoof. I put it on everything from my Arts&Crafts cabinet to door thresholds.
