If you have the graphite, try a real experiment, as I did.
Mix some graphite and epoxy. I did 2 different mixes, one with more graphite in it. Also leave one plain epoxy solution. Pour each into a separate container and let harden and cure.
Then scratch the surface of each with a nail, rock, fish hook, broken glass shard, or anything else that represents "your world" of paddling. Note the effort involved and how it affects the surface.
One of my batches (the one with more graphite in it) had a lot of bubbles foaming on the surface so I could not make a good comparison. I should repeat the experiment being more careful during mixing, and use containers with much larger surface area.
I did find that the epoxy mix (the one without bubbles in it) felt harder to scratch than the plain epoxy. Without using scientific measurements of the pressure involved, I cannot say for sure whether it really *was* harder to scratch.
