It IS a well known problem with epoxy. The tannic acid in the oak neutralizes the epoxy and prevents it from curing (at least partially), just as vinegar does when you use it for cleaning up epoxy messes. The curing processes for varnish and epoxy are completely different and you cannnot assume that because acidity is not a problem for one that it's not a problem for the other.
