At this time of the year you will be having cool spring weather in the southern hemisphere, and very cool winter temps in the northern hemisphere.
The cool weather will extend your "pot life", or the working time if the resin before it starts to "kick" and harden.
As the resin is spread outon the boat it is thinner and has less tendency to trap the heat generated by the chemical reaction between the epoxy and the hardener.
As a result, if start applying resin in the center of the boat and you mix small quantities you will be chasing a wet edge around the boat, but the edge will stay workable. The smaller batches get used up faster so you get to the next batch, and the next wet edge, that much sooner.
In practice it is a lot easier than all the mental rehearsals.
Go for it.
The worst case would be that you would get practice in doing repairs this year instead of next year--and they aren't that hard to do.
