John, If you use a countersunk screw, then the countersink certainly cuts a hole in the V of the stem, but heck, at that position, you have a glue face about an inch wide near the keel, and about one and a half inches wide near the stem. The loss of about an eighth of an inch due to the countersink is negligible.
But if you do it this way, then be sure not to fill the screw holes till you have the hull off the forms and you can fill it from inside, otherwise you might glue the inner stem to the form.
