Jay, the more important issue to look for is whether or not the boards are straight-grained. You'll probably end up with a variety of strips that orient as flat, vertical and diagonal-grained. If the grain runs out of the flat-grained strips then you'll have to work with those areas of the surface much more carefully when planing and sanding. It's best to get only boards with the straightest possible grain from end to end.
