On my first couple kayaks I used the type of hatches and hold down straps that Pygmy kayaks uses and they worked very well. They were very water tight and large enough to load gear into. On my last kayak, which is a low volume day paddling kayak I used the pryout Beckson hatches and they are completely water tight. The only downside to the Beckson hatches is that they are small and limit what you can put in the hatches.
