To get an aluminum canoe to work the material has to be fairly thick which makes it pretty heavy, otherwise they don't stay fair for very long. With a kayak you have to add the deck along with the hull. It would work, but you'd likely end up with the first trailerable kayak, too heavy to pick up :)

The rubber hatches, like Kayak Sport's, NDK's or Valley's are all waterproof, just to look decent require that they be recessed in the deck.
