I wear size 14's and I'm 6'1". I don't paddle a Guillamot, but I paddle a Romany and a Nordkapp. these are low to medium volume boats. The secret is use a bulkhead footbrace. Just place a bulkhead an inch or two ahead of where your feet would be, and pad out the rest with minicell.

One other suggestion. Use the offsets for the strip Guillamot, lay out the bulkhead where your feet would go and see if they fit.
