I used syp on my kayak and it did yellow a little when epoxy was applied. Another good cheep wood, easily accessable is the good old spruce 2x which you may have to pick thru to find boards with fewer knots, but it makes a good contrast to darker wood and it did not yellow as bad as the syp, southern yellow pine,.
