I'd give some thought to KS or VCP hatches as they are much more forgiving around sand and grit. The Beckson works pretty well in the front bulkhead (if you are using it for a footrest) to keep the front deck clear, avoids the problem of recessing a flat hatch in a curved deck. The bulkhead hatch was also an excuse to make a modern-day norsaq with pins on the wide end to un-screw it when it gets stuck.

Also, I'd make them large enough to use, I've been using my low volume kayaks for short 3-4 day trips. Well worth the inconvenience of packing to have a fun ride for the day trips once you set up camp. Also, it's kind of fun to pick the whole thing up with one hand while other people are struggling to drag their English heavies and way too much gear up the beach.
