Beveling closes all the gaps between the strips and makes the kayak look good. Epoxy could fill the gaps if you didn't bevel but it would look like hell unless you painted the hull. Beveling was a snap using the jig, including a rolling bevel. I first put the 10-degree bevel on the whole length. Then say a rolling bevel was needed starting half way down the strip so I put a small lifting strip under the main strip and planned a 15 degree strip on the rest of the strip half. Then if the last quarter of that strip need more angle I inserted a loose fence next to the fixed fence which tilted the plane even more and put on a 20 degree angle. I finished up at the very ends of the strip if needed with a small finger plane. If beveling scares you this is an easy way to do it.
