I guess it could work okay.

Freeship can show water flows by pressing alt and clicking to underwater area. Igdllorssuit2 flows are not paraller to keel so offset skeg looks like a bit not-so-good idea.

In boats the offset keels or fins can be placed by using somekind of sticky stuff. You put a small spots of this stuff to bottom and drive around with boat - stuff will then be spreaded towards stern and it marks the waterflow direction.

But the water flow in kayak is quite close to keel, so maybe in real world the difference would not be so noticeable. However the Petrel is different kayak with slightly softer chines, so waterflows can go more keel direction.

Some Greenland kayaks have both fixed keel and external keel so I guess that's no problem. The offset keel does sound interesting...
