Skin-on-Frame: cross sections spacing

I'm hoping Tom Yost or someone else familiar with cross section SOF could help me with my planning question.
As noted previously, I'm planning on a Wee Lassie canoe based off of the book "Featherweight Boatbuilding". The basic plan is to use the forms given for strip building and use them as the cross sections (dimensions modified for the different lumber). I was hoping that the spacing would be symetric but of cource I could not get that lucky. In any case I have two questions.
1, Currently there are 7 forms for a 11'6" boat. They are spaced between 14 and 20 inches apart. The first and last forms start at 15 and 16 inches from stern/stem. If I leave the first and last forms off, they would be spaced 29 and 36.5 inches from stern/stem. Is this too much space at the tips with 5 forms? Or should I leave it with 7 forms. I'm planning on using 2 maybe 3 chines.
2, Assuming I use 7 forms, the spacing is either 15, 17 or 20 inches apart. Is this close enough that I could use .75x.75 chines? (with a .75x1 keel and .75x1.5 gunwalls) Or should I stick with 1x.75 chines? If I use 5 forms then there is no question about chine dimensions.
